Roll out some gumpaste to make the platform of the shoe. Make sure that you roll out the gumpaste so that it is thicker to ward the instep (approx. 3/4 inch) and thinner at the toes (approx. 1/2 inch). Then place your template half onto the gumpaste and cut out with an exacto knife.
Take an 8 1/2 x 4 1/2 inch piece of cardstock and fold it at 2 inches, 5 1/2 inchs and 6 inches to make a form to dry the bottom sole of the shoe on. Cut a bamboo skewer to the height of your heel (approx. 6 inches with 1/2 an inch sunk inside the styrofoam block). With your cardstock form against the platform of you shoe, use your finger to smooth the platform (near the instep) to shape it up against the cardstock form. Your bamboo skewer is holding the place of where the heel with be. You will later use the skewer to make your heel. Allow the platform to dry overnight.
To make the heel roll out your gumpaste into a sausage roll with one end thick and gradually getting skinnier. Cut the sausage roll to about 5 inches long. Insert your bamboo skewer to support the heel. Flatten the thick end to make the base that your bottom sole will rest on. Place in styrofoam block and gently shape with your fingers (pinching out the edge) so that it is the same size as the heel on the bottom sole template. Leave to dry overnight.
Roll out your gumpaste and cut out your bottom sole using your temlate. I had only rolled out my gumpaste to 1/8 inch, but ended up adding a second layer to make it thicker, so I recommend rolling out your gumpaste to 1/4 inch. This will make your sole more sturdy. Place your sole onto your form. If you find that it's a bit too short just gently stretch your cutout a bit to fit. I recommend using gum glue to attach your pieces (1/4 tsp. gumtex mixed with 3 tbsp. water). Allow your shoe base to dry for a couple of days.
I think I ripped off the Jimmy Choo label three times before I was happy with it. The label ended up being 1/2 inch wide and 3 inches long. I used a quilting tool to make the stitch marks and an edible food marker to write the letters.
To make the shoe upper, trace the bottom sole template onto carstock. Then draw the shape of your upper around your traced bottom sole. This unfortunately is not an exact science, but you can see the shape that I came up with. Next roll out your gumpaste to about 1/8 inch thick and cut out your upper with an exacto knife. Use a quilting tool to mark the stitching on the top portion of the shoe upper.
Spread gum glue around the edge of the bottom sole and then apply your shoe upper. This is probably the part that I found the most difficult because I would apply one side and then start applying the other side only to have the first side peel off, so you have to press quite firmly when apply the upper to the side of the bottom sole. I also found that my upper template that I made was a smidge too long so I trimmed some length off the back. Use some scrunched up paper towels to support the shoe upper until dry. Allow the shoe to dry for a couple of days. Once it is completely dry you can paint the shoe with some liquid shine (1 part clear corn syrup mixed with 2 parts vodka). I added some white pearl dust (Wilton brand) to the liquid shine to give it a shiny pearlized look. The liquid shine should be dry with an hour or two depending on the humidity.
